Cover and cook on low for 5–6 hours or on high for about 3 hours, until the potatoes are fork-tender and buttery throughout. As they cook, the potatoes release just enough moisture to create a soft, flavorful base, while the butter melts down through every layer. The edges become delicate, the centers stay creamy, and the seasoning settles perfectly.

This dish works because it doesn’t try too hard. You can serve it as a main with a simple salad, or as a side next to chicken, meatloaf, or roasted vegetables. It’s also easy to customize later with garlic, herbs, or cheese — but honestly, it rarely needs anything extra. People usually go back for seconds before you even suggest it.
